Another amazing find

My friend Sara, who is seriously Little Miss Betty Crocker, has recently turned me on to ricotta. This serving was way, way bigger than I intended. It is mixed with Splenda, raspberry extract, lemon extract, and topped it with sugar-free Hershey's syrup!

Baby steps

Proof that I park at the farthest end of the parking lot, all alone. I have started to really enjoy the extra walk. What a view, even from a parking lot, right? Gotta love NC!!

The perfect lunch

One thing about moving... We won't have time to go home for lunch. Right now, I have no gas money to justify the extra eight miles a day. So, I have started staying in on lunch early. When you get to enjoy a beautiful afternoon outside with a book, it doesn't feel so much like a compromise.

The packing has begun!

Yesterday my good friend Mel came over and helped me begin to tackle the extensive job of cleaning and packing up my apartment. She even picked up boxes from the package store for me. I am extremely grateful to have found such good friends here in NC. I am also proud that I am not procrastinating, for once!!!

Some changes this way come...

If you actually read this blog, you may have noticed that I have fallen off the wagon a little bit. Have no fear, though, I am still following my "allergy diet" and doing well... I just got bored taking pictures of the same fruit snacks and rice cakes every day. You probably got sick of seeing them. For two solid months I took a picture of literally every single thing I ate!!!

So now, since that has gotten old and tired, it is time for a change. This journal is going to become a journal of positive change. A mostly picture journal of how I am trying to improve myself and become a healthier, happier person. I will still be keeping livejournal, though, of course. I will also still be posting food, but only if it is actually something worth sharing, and with better descriptions and recipes.

Please let me know if you have a similar journal I should be following.

In this picture is the snacks/lunch that I packed to bring to work with me today. In it is boarshead spicy (gluten-free) sausage that I picked up the other day, celery, and laughing cow cheese. How is it that nobody has ever told me about laughing cow before? It is heavenly when spread on celery! No joke, try it!!!!
